In fact if you went to an RSL (Retired Services League - the social center for many small towns) club for a Sunday lunch curried eggs was bound to be offered. I seem to remember celery and carrot featuring in the RSL version though.
These are a good easy meal that you can make the curried eggs and carry them with you and buy a loaf of bread whenever you need to eat.
Ingredients: 5 Eggs 2 heaped teaspoons Curry Powder 6 Slices Bread (prefer Rye or non-commercial wholegrain) Low Fat Cottage Cheese
Preparation: Boil the eggs first by placing them in boiling water and letting sit for 5-10 minutes. Let the eggs cool down. Peel the egg shells off and place eggs into a bowl.
Add curry powder
Cut eggs into small pieces with a knife take 3 yolks out (or leave in depending upon your present diet goals). Mash the eggs and curry powder and a large dollop of cottage cheese and a splash of water (to make it more a sticky paste rather than individual small chucks which will fall off the bread) with a fork until they are a creamy paste.
