A Thai friend showed me how to make these one day, though they are relatively high in fat, they do make a good final meal for the day when I do not eat any carbohydrates...
Or if you are eating a diet higher in fats and low in carbohydrates. Problem is these taste best when you 'boil' them down and have a thick sauce consisting of olive oil, chicken fat, garlic and salt - this tastes fantastic when poured over rice. Use it as one of your cheat meals during the week?
Ingredients: 1kg Chicken Wing Drumsticks (chicken wing with the tips cut off from the joint down)(2.2 lbs) Garlic, six large cloves or more Salt Extra Virgin Olive Oil Boiled Rice (optional - if you are bulking or just need calories)
Preparation: Cut the garlic up (and crush it to release more flavour) Put oil in the pan and heat, when hot add in the chicken wing drumsticks, add garlic, add salt, toss the chicken until it is brown on the outside and partially cooked. Add a 1/3 cup of water and put the lid on the pan to steam the chicken through. Let steam for about 10-15 minutes, checking the water hasn't boiled off (or your food will burn). Serve (over rice if you aren't dieting).
