Australian "Hawaiian" Chicken Wraps

Hawaiian chicken wraps - why? Well it seems every food in Australia that contains pineapple must be a Hawaiian idea. Why? Goodness knows. Australia has more pineapples than Hawaii for sure.

Anyhow here's another way to choke the chicken breast down...

These can also be made with Pita Pocket Bread or lebanese bread, like they use for kebabs. The bread just hast to roll up without breaking to hold the contents.


Ingredients:

225 Grams of Chicken Breast, skin off (1/2 lb)
Pineapple, fresh (tinned if you can't get fresh)
Lettuce
Tomato
Low Fat Cottage Cheese
Flat Bread suitable for making wraps

BBQ Sauce for Chicken


Preparation:

Turn on the fry pan/wok, add some olive oil.

Remove skin from the chicken breast if required. Dice the chicken breast. Dice the pineapple

Put chicken breast into the hot pan, stir. Cut the pineapple into small pieces, put in the pan with chicken.

Cut the tomato into slices.

Spread low fat cottage cheese onto the flat bread

Put lettuce and tomato onto the bread

When the chicken is cooked add BBQ (I use Heinz brand) sauce to the pan, boil off any excess water and let chicken/pineapple sit in the BBQ sauce and cool down for about 15 minutes

Put the chicken and pineapple on the bread and roll them up into wraps.
